The Project
The Télos project was conceived because Tenuta Sant’Antonio wanted to provide consumers with a healthier and more natural wine which had the same high quality standards of the estate’s current products.
The result is three wines, Télos Il Rosso (red), Télos Il Bianco (white) and Télos Amarone. Thanks to our 6-year research, we will finally be ready to sell our first bottles of Télos Il Bianco in 2011, followed by Télos Il Rosso in 2012 and Télos Amarone in 2013, which completes the SO2 free wine project.
What makes these wines so special is their production process.In the vineyard, fertilisers are used based on an analysis of the musts of the grapes obtained from each individual variety. Pesticides are replaced with natural alternatives which do not have pre-harvest intervals and do not release residual molecules into the wine. The vines are tended by hand until it is time for the grapes to be picked.
The wine making process is activated exclusively with organic products, so no sulphites are added during pressing, fermenting and before bottling, and no products containing sulphates and phosphates are used during fermentation.
Cellar conditions must be perfect: the wine obtained with this method is a lot more susceptible as it does not contain added chemical substances which protect and preserve it. The wine, which is healthier but also more vulnerable, must therefore be kept in a healthy and spotlessly clean environment. Temperature control is a more complex business and only inert gases can be used to prevent oxidation during processing.The wine “works” to create its own independent immune system and, in doing so, the quality is greatly enhanced, preserving its soul and naturalness and increasing the value of its terroir.
